Is upon us,so what will you be collecting this year.

Already been a good mushroom season over here in Germany. I shall be out at the weekend looking for natures harvest. I am especially interested in Hawthorn berries. I shall be going through all my relevant books to figure out how best to use them. Wine and jelly spring to mind, I really want to add this to my harvest list and am looking forward to learning all about and making use of this tree.

Off the top of my head I can think of beech nuts, hazelnuts, walnuts, sweet chestnut, acorns (they're sort of nuts, right?)

You'll find with acorns that some trees have less tannin in their acorns and you don't need to spend so much time in their preparation,most of which involoes removal of the tannin.

Doh! I really should learn to read the question. My main nut focus this year has to be acorns. Going to use the burial leaching method and a flowing stream to get the tannin levels down. Anyone else used either of these methods?

The burial method I've heard about but haven't tried,is to mix them with wood ash put them in a hole soak with water and cover.About once a day well water the area for 3 days.:biggrin:

if this bloody gets taken off my leg in time itll be beech nuts cob nuts and sweet chestnuts for me!
