I've only ever done nettles with scrambled eggs, I thought they were very tasty! I'll have to give this a go at some time, scrambled egg is far easier and quicker though! Call me lazy! :rolleyes:

I know! :biggrin: The season is definitely changing at the moment though, we're gonna see more and more wild foods cropping up and this year I really want to make an effort at trying more out. I now know of a patch of cat tails not too far from me, I've been looking for some in the local area since I moved here and not found any before now. Gonn a give the roots and pollen a try sometime this year if all goes according to plan, and I may even scatter some of the seeds in a boggy area I know of, try and get a bit of bio-diversity going on there! :biggrin:

Eggs and nettles! No really, it is that simple! A knob (!) of butter in the pan and melt it, chuck some roughly chopped/ripped up in your hands nettles in and fry off until they are wilting, bang the egg in and add a pinch of salt and pepper if that is your thing. A bit of tabasco can pep it up a bit but if you go for it with just the egg and nettle then you'll taste the flavours. Pick the nettles from above waist height if you want to avoid bulldog piss flavour!

Mmmmm. Think I'll be giving both of those recipes a go! Thanks guys. Got any recipes for home made oatcakes/flapjacks? After a decent high energy one for bimbling.

Oatcakes you need Bodges' recipe. Flapjacks is easy enough though, I tend to make mine meat loaf chunky! I don't do thin crispy flapjack. Take a look about, the recipe is pretty much always the same, but it is the bits you add that make the difference. Normally, it consists of oats, butter, brown sugar and golden syrup, but if you add some jif lemon or bits of citrus fruit, you can give it a real zing! I nicked that idea afdter trying some of the flapjacks Addos' wife made. very nice indeed! Also, after baking them, add some chocolate to the top and let it set. You can add raisins and/or nuts. There is loads you can do to personalise them, and also to make them an even greater trail snack that keeps really well in a pack. Wrap them in greaseproof paper.

Cheers all. Much appreciated. I'd figured I could add (chuck in :biggrin:) pretty much anything that took my fancy; got a few tasty treats in the larder ready to go. It's the baking times I'm after.
'When it's brown it's done; when it's black it's buggered' as my Gran used to say... Wouldn't mind a spot of guidance though.

question:
I spent ages gathering the top two leaves of each nettle but when I saw ray and Gordon do it, they grabbed bunches. are the nettles still young enough to do this?

From what i was told by my Great Aunt the top leaves are the freshest and tastiest and she was a great forager,i just wish id had the chance to learn more from her,she also new medicinal plants and her mushrooms.

I tried making nettle soup a few years ago now and we went for the "grabbing bunches" method ... not sure if it was that or what but it wasn't great - the soup tasted fab, really nice, but as we wolfed it down, we both started getting a sore throat. Eventually had to give up and had a whopper of a throat for the rest of the night! The nettles were really well cooked so all I can think is that it was because we didn't get just the tips.
I've been meaning to retry making it for, oooh, about six years now but still feel a bit put off! :o

I had nettle soup in a local pub ran by a mad Irish man or that was what he called himself, it was great. Finally after 20 years I have the recipe, so I'm off to collect nettles in the morning. Thanks for sharing with us. The mad Irish man would not tell us how.:)
Another good one is (this is a judge the ingredients job, i like cooking this way ;) ) top 4 nettle leaves to fill a billy, add water half to 3/4 of the billy can, add a veg or chicken stock cube, simmer till nettles are soft, add a few table spoons of rice flower, rice cakes crunched up work well desolve this, add a tea spoon of nutmeg and half of cayenne pepper smoked is best then stir in some cream or crem fresh to suit pallet then a knob of butter to add a glaze to the soup stir well add a little salt to taste job jobbed, you can also add chopped hedge garlic or hog weed shoots etc to it, served with a nice crusty bannock to mop it up and fannys yer grannie, ill be having that tomorrow lunch time! SHLERP!!! \\:D/
Ok so I'm now spurred on. I'm not confident with foraging but, I'm sure I wont go wrong with nettles. The only problem is that I don't think I'll find any waist high as suggested by spam. If the dogs aint got to it then I'm sure the foxes will have :vom: Oh well! A good boil as suggested by Bernie will kill all the errrm germs :lmao: Gonna have a go at sticks's recipe, sounds lurvly

You'll find nettles somewhere that aren't near where dog walkers go. They'll be OK. Isn't there a corner of your allotment that may have a few nettles growing?
A good wash and a boil should sort it I'd think?
