I've always wanted to see it done from when its been shot. Gralloching in the field and then skinning and jointing at home. I know theres a few experts on here, they just live to far away though...

its the same method i use for roe, well explained tutorial.

I do mine differently,i find it easier when they are hanging,but all roads lead to Rome :)

One day...
They usually do a gralloch on the friday (or is it saturday) in the main field at the Wilderness Gathering, although it does tend to draw a large crowd.

Its something i've never done, but always wanted to have a go at. Something else to cross off the list in me head and a practical skill as well.

Hi Spiritofold,

We're running a 'Deer in a Day' course on August 2nd (with a wild food forage day on the 1st for anyone who wants to make a weekend of it).

Each participant will be given their own deer to skin, joint up and take home in a little polystyrene cool box. We're going to cover de-fleshing the hide for tanning, removing the sinews, using antler and bone by products and making venison jerky as well as the skinning and field butchery. We'll be having venison for lunch too.

We're pretty near to you, about 25 minutes further on from Salisbury on the A303.
