Continuing on from the poncy food thread...
Silverback went on to mention about his love of cooking and some tips on gravey.
Do you enjoy a good roast...?
Do you do all the trimmings..?
Do you make a proper gravy..?
Lets have some tips then.

I love a roast dinner and we breed our own meat for the table and try to grow our own veg too..

My ingredients...
2 bottles of Aussie chardonay
taters..
carrots
shallots or otherwise, onions..
broccoli..
parsnips..
peas (frozen)
Whole chicken, or whatever meat you want..
Bisto gravy powder..
White cabbage.
leeks..
Garlic.
Any other veg that is seasonal..:)

Start by consuming some wine and putting some music on...
Wash meat, dry, cover in crushed garlic butter after slicing the skin, salt and pepper and wrap in foil. Maybe wrap in some bacon too if you likey.. Put in oven at about 190 c depending on your oven...
Drink some more wine..
Peel your taters and root veg and par boil...
Put in oven in a tray with fat (pre warmed). Use a brush to coat veg with fat (or oil)..
Drink some more wine..
Prep the rest of the veg and soak in water, so its ready to boil or steam..
Dwink mowr wine...
Gert yoer gravey readey and in err jug..
Dwink some mor wine..
hmmm
errrrm..
have some nibbles... Peanuts and crisps will work ok...
dwink som morr wine..
check the meat and uncover for the last half hour of cooking..
Baste more if you need too...
bit morr wien..
mmmm..
**** the veg is boiling...
No worries, all is in control...
More wine....
mmmmm..
Ok, keep shaking the veg in oven.....
Oh know.... Sod it...
I have forgotten the Yorkies...
Errr
4 oz flooor
2 eggs
pinch salt
half pint milk
more wine....yeah..
Chuck yorkie tray in oven with fat in (or oiul)
drink more wine and consume more nibbles..
pour Yorkie mix into tray and put back in oven...
Bloody hell this wine is good...
Errrm, keep checking wine and drink loads of veg, try not to burn yurselfves and enjoy yor dinner... Oh, some of the onions go into the gravy too and don't forget to roast some onions and or shallots with the roast veg.
Something like that...
I do love to make a roast...

Failing that.... Go and order an Indian....

Sounds like one of mine!

Roast ... (beef, chicken, lamb, pork, goose, duck or whatever!) with all the trimmings is hard to beat!

You missed out the bit about burning yourself on something like a hot pan though.
Dropping said pan onto the lino.
Burning mark into lino so you are always reminded of said burn :rolleyes:

I don't do anything poncy with my sunday roast, i don't add no salt or pepper to anything, if folk want it they put it on when dished up,

i steam my veg, after washing veg (except spuds) i peel into the steamer pan then use that water for my gravy, to make my gravy i use 2 oxos, burdalls gravy salt & cornflour. i do same gravy for all my meat :) & it's got to be really thick stodgy gravy not that thin watery kack :icon_tong
I don't eat yorkshires or stuffing :icon_tong

It's not that Jp, it's just that I'm dangerous anywhere near a cooker :) only found out by accident really that under the steak that comes in a tray from the shop, there's a piece of paper!... Caught fire in the pan..:lmao:

What is all this poncy stuff like "Bisto?
Gravy is meat and veg juices from around the roast, wine or other booze, (a little veg water if you must) and a little cornflour to thicken if you like it thick.
Adding chemically enhanced brown dye such as Gravy Granuals is a sin against the meal!
A receipe for Mash
2 large spuds per person
1 thumb of butter per person
1 thumb of strong mature cheddar per person
1 egg per person
Salt, pepper, nutmeg to taste.
Put scrubbed/peeled and chopped spuds in pan with enough water to cover them generously and boil until soft.
Drain spuds.
Add milk, butter, a generous grating of Nutmeg (to taste) all but a little of the cheese and beat the mix to a creamy mash.
Add the eggs and beat in quickly.
Return the spuds to a low heat and keep beating (this is if you dont like the idea of raw eggs)
Put the spuds in a shallow heat proof dish, sprinkle with the remaining cheese and bung it under the grill until browned.
Salt and pepper to taste.

A meal on its own!

Roast potatoes today with my roast I think, mmmmmm

Peel and boil for 5-10 mins depending on how big u like them.
Drain off water from the pan, leave out on a tray for all the steam to come off
Back in pan for a good old shake to fluff up the outside.
Another tray should be in the oven with 5mm ish of hot oil in it, roll the potatos in this untill coated, and salt.
Cook on a high heat for 45 mins. Turning half way through
Crispy roast taties.

I cant always be bothered but nice as a treat.

O and I love proper gravy, made by de-glazing the meat pan and adding stock cube, veg water, booze and herbs.

Thats it Im going to the kitchen to start!

Three full bellies. Cooked the works today, my turn.
Chicken outdoor posh one, Roast taties, yorkshire puds, stuffing, leeks carrots, and home made gravey.
Apple crumble for afters. Yum.

Well, I do love roast suasage meat - home made natuarally with some finely minced pork and some bramley pushed through my spong mincer :)

Must have cranberry sauce (home gorwon naturally) with chicken too.

Since we have entered photo stakes now.........

Very nice Red never had a Sunday roast as was travelling back from Middlewood but will post some pics of the roast i had last night:)

Only a Christmas? Man I sulk if I haven't had them in a fortnight :) Same as yorkie pud - goes with everything (especially toad in the hole)

I am with you all though - the proper British roast is probably the best meal out there. I have a pictorial somewhere for port and cranberry jelly if anyone wants one in time for christmas?

I remember being told that traditionally your only sposed to eat yorshire pudding at a certain time of the year? Might have been during winter????

We eat it every weekend with a roast.
I like it when its made as a big one that you cut up like a cake.

I love yorkshire pudding.. I often make huge ones in round sponge cake tins and put all the roast inside it..
Or mash, sausages, baked beans and onion gravy in a big yorkie... Cor yeah..

Second after the Sunday roast for me is homemade STEW, a good veg & meat rich, thick hot Stew with homemade Dumplings :supz:


guess what i just cooked today for tea !!! & tomorrow hmmmm Stew :o :biggrin:

With you there casey, be doing that on Saturday I recon, as for once i'm going to me mothers for the works this Sun and boy am I looking forward to it, been a while and she taught me so its bound to be good :biggrin:
